A great way to make mouth-watering, fall apart tender beef brisket is to braise it in the oven. I got this recipe from The Food Lover’s Kitchen app on my iPhone, a great app if you haven’t checked it out! This recipe doesn’t require a lot of ingredients so it’s a good stand by if you have the time. I like to make it on weekends and then have scrumptious leftovers during the week. The sauce will really thicken up and be DIVINE.

What You Need:
Beef brisket (2-3 pounds)

1 large onion, diced
3 cups diced tomatoes (I use 1 box of Pomi chopped tomatoes)
Salt and pepper to taste
2 tbsp each oregano and basil

What You Do:
Preheat oven to 350º
Place diced onions in cast iron skillet or shallow roasting pan, covering bottom of pan with the onions
Place beef on top of the onions and sprinkle with salt and pepper and 1 tbsp each of the oregano and basil
Place in oven and roast at 350º for one hour

Throw diced onions and beef in skillet.

Remove from oven and lower oven temp to 325º
Dump tomatoes over the beef and onions.
Sprinkle with more salt and pepper and another tbsp each of the oregano and basil

Cover with foil and place back in oven for 4 hours

Cover and roast at 325 for 4 hours.
