A delicious taste of the Mediterranean in an easy to make Greek salad

This Greek salad recipe comes from one of my favorite websites, Mark’s Daily Apple. I have two of Mark Sisson’s cookbooks (the Primal Blueprint Cookbook and the Primal Blueprint Quick & Easy Meals) that have become the go-to’s in my kitchen. The recipes are all grain-free which is a huge bonus for me because I can’t eat gluten. And they’re delicious! I’ll be sharing more of their deliciousness in future posts, trying to pick out those that are pretty simple to follow and don’t require obscure ingredients.

Greek Salad Recipe from Mark's Daily Apple

 

As summer is coming to a close, I wanted to post a salad recipe that is refreshing, delicious, and chock full of nutrients. Mediterranean cuisine is my favorite , the salty cheeses, the olives, the fresh produce – it all makes my taste buds dance in happiness – oopa! And a Greek salad is my go-to whenever I’m eating out; I love ’em. So why not bring that experience home in a simple, easy-to-prepare and just as good (and probably better!) as a Greek salad at your favorite restaurant?

Gather:

For the Greek Salad:

4-5 ripe tomatoes

1 small cucumber

1/2 can black olives

1/3 cup crumbled Feta cheese

1/2 medium red onion, sliced

Salt and Pepper to taste

For the Greek Salad Dressing:

1 clove of garlic, minced

1/2 cup olive oil

1/3 cup red wine vinegar

Oregano (if desired)

Salt and pepper to taste

Prepare:

Combine all salad ingredients in a bowl.

In a separate bowl, whisk together all salad dressing ingredients.

Pour over and serve.
